sunday meal prep 7/24/16

Hey everyone! I hope you are all having a lovely weekend! We have had a wonderful weekend, including a family dinner at my parents, where Draz got to meet some of my extended family and I got to see a few people I hadn’t seen in many years 🙂 It was a lot of fun, full of laughter and tasty food! That was the highlight of our weekend, though I did get some photography work done as well. That’s pretty much the highlights from our weekend, so now on to our meal prep for the week!

I decided to keep things pretty basic this week with our salads and snacks. While I do like to play around with my salads sometimes, it is much quicker and easier to prep the same salads for both of us, so that is what I did this week. Plus I love the buffalo chicken and ranch salads, so it’s no hardship to have them again! 🙂 For our snacks I just made some Cookie Dough Protein Bites and put together my grapes and cheese.


I’m actually trying to cut down on my snacking right now, so I might be making a few less lately. I’ve also cut down on the store-bought snacks too. They are all healthier options for snacks, but too many snacks is still too many snacks! My biggest downfall for that is snacking out of boredom or restlessness, which was made worse recently when I wasn’t able to work out. Do you have problems with boredom snacking? How do you combat it?


For the main courses, I went with 3 dishes we’ve made before and one new one – Skinny Lasagna Rolls, Garlic Pasta, Thai Peanut Chicken Pasta and (new) Crock Pot Wild Rice, Quinoa and Chicken Soup! Are you surprised to see the Thai Peanut Chicken again? Because I am definitely not! This is one of our favorite recipes overall and pretty quick to put together too!


I will admit, I was both excited and apprehensive about the soup. I’ve had quinoa many times, but never in soup. I wasn’t quite sure how it would be, texture-wise….turns out it’s delicious! This soup was very much like the comfort of Chicken and Noodle Soup, but thicker 🙂
